Last week Camden Locker LLC went to the Preble County Pork Festival to process the pork chops for the festival. This is our 3rd year processing pork loins into pork chops for the festival. This year we cut 6 skids of pork loins... to break that down.....

6 skids of pork loins equals:
(120) cases of pork loins
(480) total pork loins
We averaged 40 pork chops per loin, so that equals 19,200 pork chops. Some of these chops and a few of the loins were sold in the country store at the festival, not grilled and served.

This year, we handled marinading the chops for the festival as well. In the past we only were responsible for cutting the chops. We unloaded pork loins, de-boxed them, cut them, loaded into marinading bins, mixed the marinade, filled the marinade into the bins and loaded the bins of chops back into the re**er trailer.

We marinaded the chops with marinade provided by the pork festival, as has always been.

Stephanie and I are very proud of our crew, we cut from 8am to 6 pm Friday and for about 4 hours on Saturday. Everyone worked as a well oiled machine and it went pretty smoothly!

Plans for 2026 are already being discussed and we have been asked to return for the 2026 Pork Festival.
