One at a time.
There isn’t just one food system in America. Approximately 1-3% if the beef in the USA is still processed by “extra small” processing plants like ours. You can still participate in this alternative market to keep the old ways alive.
Industrialization has the advantages of scale, efficiency, and lower prices. Those are good things for the greater food system that feeds the cities and huge suburban populations. The industrial food distribution system is enormous. And that’s cool…
But we ain’t going nowhere. We are keeping the old ways alive. Rural communities and small ranchers still need small local processors.
We still process one cow at a time. By hand. It costs more. But it’s still better.
