Geneva Lakes Produce LLC

Geneva Lakes Produce LLC Geneva Lakes Produce is a family owned produce farm committed to growing the highest quality produce.

Farmer Scott (Scott Koster) grew up on a farm - he's the son of a third generation farmer - and has spent most of his life making things grow. Growing up in Kankakee Illinois, Scott worked both on a vegetable farm and with his father (Claude Koster) growing gladiolus and strawberries. After marrying Jacqueline Koster-Furbee, in order to provide for his family Scott began a career in seed sales whi

ch led him to move to Burlington, Wisconsin. As time moved on and Scotts family grew, he slowly moved out of seed sales and back into vegetable farming. Scott and Jackie now have 2 sons, Jordan (1989) and Corban (1992) and 3 daughters Abigail (1994), Magdalene (1998) and Priscilla (2002). Everyone helps out on the farm in their own way, but it is currently run by Scott, Jordan and Corban. Geneva Lakes Produce has a farm stand (Hwy 120 and Hwy 11 in Spring Prairie), does roughly 15 farmers markets per week and does some wholesale business to other local farmers, restaurants and grocery stores. Geneva Lakes Produce focuses on providing fresh, local, safe and affordable produce to wherever there is a need for it. Inspired by the satisfaction of appreciative customers, employers and employees both of Geneva Lakes Produce are glad to work the long hours and tough the miserable weather days in order to provide their customers with the best of the best. Feel free to check out our website for more information on us, our markets and the restaurants/stores we provide for at http://genevalakesproduce.com/. We greatly appreciate all business and hope to continue providing for our great customers for years and years to come!

Watermelon plants are going in the ground!! We work hard to rotate our crops season to season to keep from depleting the soil and to avoid pests and diseases that try to carry over. The last time we had Watermelon in this field was over a decade ago and we had a bumper crop (see the picture in the comments). Hoping for another season like that one!

JERUSALEM ARTICHOKE

a sweet, nutty flavor similar to a potato mixed with a water chestnut

🪴Appearance & Taste: The tubers look similar to ginger root, while the plant grows 4–10 feet tall with yellow daisy-like flowers.

🪴Nutrition: They are a rich source of prebiotic fiber, specifically inulin, which promotes gut health and makes them a good alternative to potatoes for managing blood sugar.

🪴Culinary Uses: They can be roasted, mashed, sautéed, pickled, or eaten raw for a crunchy texture.

🪴 CHERVIL: the "forgotten herb" of French cuisine.
🪴 Helps with high blood pressure and is a helpful digestive aid.

CHARACTERISTICS
* Appearance: Lacy, finely cut, light green leaves that look like parsley.
* Flavor: Mild, with hints of anise and parsley; flavor diminishes with heat.
* Uses: A classic herb for finishing dishes like omelets, sauces, soups, and salads; also used in herb butters and dressings.
GROWING
* Planting: Direct sow seeds in spring or fall, as they don't transplant well. Sow every few weeks for a continuous supply.
* Light: Full sun to partial shade, especially in summer.
* Soil: Moist, well-drained, and rich.
* Water: Keep soil consistently moist.
* Temperature: Prefers cooler weather (55-65°F) and bolts in heat.
* Harvesting: Snip outer branches as needed; harvest before flowering for best flavor. Freezing chopped chervil in water cubes is a good storage method.
