Easy Chickpea Salad

Ingredients

* 2 cans chickpeas, drained and rinsed
* 1 cucumber, diced
* 1 cup cherry tomatoes, halved
* 1/4 cup red onion, diced
* 1/3 cup feta cheese crumbles
* 2 tablespoons chopped fresh parsley
* Salt and black pepper to taste

Dressing

* 3 tablespoons olive oil
* 1 tablespoon red wine vinegar
* 1 tablespoon lemon juice
* 1 teaspoon Italian seasoning
* 1 garlic clove, minced

Instructions

1. In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, feta, and parsley.
2. In a small bowl, whisk together olive oil, vinegar, lemon juice, Italian seasoning, and garlic.
3. Pour dressing over the salad and toss until everything is coated.
4. Season with salt and pepper to taste.
5. Chill for 20–30 minutes before serving for the best flavor.

* Avocado
* Kalamata olives
* Pepperoni slices
* Diced bell peppers
* Grilled chicken

Cream Cheese Bacon Corn Casserole

Ingredients

* 2 boxes Jiffy corn muffin mix
* 2 cans whole kernel corn, drained
* 2 cans cream-style corn
* 8 oz cream cheese, softened
* 1 cup sour cream
* 1/2 cup melted butter
* 2 cups shredded cheddar cheese
* 8 slices bacon, cooked and crumbled
* 2 eggs
* 1/2 tsp garlic powder
* 1/2 tsp black pepper
* Optional: chopped parsley or green onions for topping

Instructions

1. Preheat oven to 350°F. Grease a 9x13 baking dish.
2. In a large bowl, mix cream cheese, sour cream, melted butter, and eggs until smooth.
3. Stir in whole corn, cream-style corn, Jiffy mix, garlic powder, pepper, half the bacon, and 1 cup of cheddar cheese.
4. Pour mixture into the baking dish and spread evenly.
5. Top with remaining cheese and bacon.
6. Bake for 45–55 minutes until golden and set in the center.
7. Let rest 5–10 minutes before serving. Garnish with parsley if desired.

Tips

* Add diced jalapeños for a spicy version.
* Pepper jack cheese works great too.
* This dish reheats really well for leftovers.

Cheesy Tortellini in Red Sauce

Ingredients

* 1 (20 oz) package cheese tortellini
* 1 tablespoon olive oil
* 3 cloves garlic, minced
* 1 small onion, diced
* 1 pound ground Italian sausage or ground beef
* 1 (24 oz) jar marinara sauce or homemade
* 1 (14 oz) can diced tomatoes
* 1 teaspoon Italian seasoning
* ½ teaspoon salt
* ½ teaspoon black pepper
* 1 cup shredded mozzarella cheese
* ¼ cup grated parmesan cheese
* Fresh parsley or basil for garnish

Instructions

1. Cook the tortellini according to the package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened. Stir in garlic and cook for 1 minute.
3. Add the sausage or ground beef and cook until browned. Drain excess grease if needed.
4. Stir in marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
5. Add the cooked tortellini to the sauce and gently stir to coat.
6. Sprinkle mozzarella and parmesan cheese over the top. Cover for a few minutes until the cheese is melted.
7. Garnish with parsley or basil and serve warm with garlic bread or a salad.

* Spinach
* Mushrooms
* Red pepper flakes for heat
* Ricotta dollops on top

Watermelon Feta Mint Salad 🍉

Ingredients

* 6 cups watermelon, cubed
* 1 cucumber, sliced and quartered
* 1/4 red onion, thinly sliced
* 1/2 cup crumbled feta cheese
* 2–3 tablespoons fresh mint, chopped
* 1 tablespoon fresh parsley, chopped (optional)

Dressing

* 2 tablespoons olive oil
* Juice of 1 lime
* 1 tablespoon honey
* Salt & black pepper to taste

Instructions

1. In a large bowl, combine the watermelon, cucumber, red onion, feta, mint, and parsley.
2. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
3. Pour the dressing over the salad and gently toss until everything is coated.
4. Chill for 15–20 minutes before serving for the best flavor.
5. Garnish with extra feta and mint if desired.
