Zaffaranos Microgreens was born in February of 2021, in the wake of the Covid-19 outbreak. The owner, Stephen Zaffarano, was diagnosed in December of 2020 with the virus and struggled with long-term symptoms, at-home oxygen 24/7, pneumonia, pleurisy, and nerve damage for several months. Before that time, Stephen was preparing to partner with a neighboring farmer to raise Cornish Cross chickens on-
pasture but was unable to continue with the project due to his physical limitations. He began researching ways to farm that he could do with those limitations and discovered microgreens! Stephen's research lead him to several you tubers who were successfully starting and owning their own microgreens businesses. He began growing from a single rack and with about a dozen deep 1020 trays, mostly for his own health benefits from the produce. Within a couple of weeks, people were clamoring for their own microgreens and he made back his initial investment of less than $300 in 3 weeks! Zaffaranos Microgreens is set on providing home-delivery services within 1 to 3 days of harvest; to provide customers with the highest nutritional content they could hope for in their fruit and vegetable microgreens!
