We are so proud of the impact the Brighton Farmers Market continues to have on our community! Creating vibrancy with neighbors coming together, local growers sharing their harvests, kids dancing to live music, and neighbors catching up. We continue to increase access to local foods, making fresh, healthy, sustainably grown produce more available to everyone in our community. 🍆🍓🥦🍯 And we kept equity at the center — building a space where ALL voices, families, vendors, and cultures feel welcomed and valued. 🤝💜A big shout to the sponsors that make this market possible...we could not do this without the continued support of .brighton

Quick crisp topping for baked fruit desserts

Pick your pan. I used a 9×5, so I want about 3 cups of crisp for full coverage.

Oven temp between 325 and 375, I tend to toss this in while other things are cooking.

Timing varies depending on temp and fruit. Look for filling bubbling at the edges.

For the crisp, I used:
Flour
Oats (old fashioned or quick both work)
Sugar
Cinnamon
Vanilla
Salt
Neutral oil

For a 9×5 pan, In a medium sized bowl, combine about 1 cup oats and 1 cup flour (all purpose works! So do 1:1 gluten free replacement flours) with half a cup of sugar, and a pinch of salt and warm spices. Once the dry ingredients are mixed, add a dash of vanilla and add in the first glug of oil. Stir. The mixture should be a sandy consistency. Add more oil if there is still dry flour. Add more flour or oats if the consistency is too liquidy. Set aside.

For the fruit, I used
A mix of peaches from .farmcorp and plums from
A pinch of sugar
A pinch of salt
A dash of plum brandy

Most fruits should work! Let us know what you end up using!

(Last week I made an apple crisp 🍏 🍎. Tomorrow I will probably make another apple crisp. )

Cut up fruit, removing the seeds/pits. Toss fruit in the pan with a little sugar, a pinch of salt, and a dash of complimentary liquid (orange juice and apple juice work well!)

Once fruit is settled in the pan, plop the crisp topping over, aiming for 95% to full coverage.

Bake in oven. Cover with foil if the crisp browns too quickly and the fruit needs more time.

Remove from oven, let cool, and enjoy!

Warm eggplant salad is one of my fall favorites.

Based on Bon Appetit's recipe, it's riffable and delicious. I sometimes leave out the red onion, or swap it for roasted garlic, and add parsley to the mint portion.

Link to the more official ingredients list:

https://www.punchfork.com/recipe/Warm-Eggplant-Salad-with-Walnuts-Bon-Appetit

Ingredients
Makes 4 servings

*4 medium Japanese eggplants (about 1 1/2 lb total), halved lengthwise, cut into half moons (I have used other types of eggplant without any issue, just cut into bite-size pieces!)
*3/4 cup walnuts
*1 small red onion, very thinly sliced (skip if you're not so into onion, swap for roasted garlic, or use dried minced onion-- it will rehydrate in the dressing!)
*1 1/2 cups mint leaves, torn if large (can add or swap with parsley or other tender herbs)

Dressing:

*2 tbsp date syrup (don't have? Use maple syrup or honey instead)
*1/4 cup plus 1 Tbsp extra-virgin olive oil
*1 tsp ground cinnamon
*1/2 tsp crushed red pepper flakes (paprika is a nice swap)

*1/4 cup fresh lemon juice (from about 1 lemon)
*Kosher salt

I tend to roast the eggplant instead of pan frying. It takes longer, but if the oven is already on, I'm going to use it.

Toast the walnuts, roast the eggplant.

Make the dressing in a medium to large bowl. Olive oil plus lemon plus date syrup and spices.

I like to chop the walnuts and the herbs up a bit. 🔪 🌿

Add the cooked (still hot) eggplant to the dressing. This blooms the spices. Add in onion or garlic, the herbs, and walnuts. Toss to combine. Taste! Add more lemon or date syrup or whatever you think this salad needs to sing.

Enjoy!
