Slow cooked in a homemade spice rub with onions, garlic, tomatoes, lime, cilantro, jalapeño until falling apart.
Served with a citrusy homemade veggie slaw (red and green cabbage, cucumber, bell peppers, carrots, scallions, cilantro, parsley, basil, lemon juice, extra virgin olive oil), Cajun seasoned oven roasted sweet potato fries and chipotle garlic mayo.
Who needs a bun! 🤷🏼‍♀️ I don’t!
