🌮 Cinco de Mayo falls on a Tuesday this year, so we had to make something special.
On Tuesday, May 5th, we’re making Quesabirria Tacos & Consommé! Slow-cooked beef, Oaxaca cheese, tortillas crisped on the griddle, and warm consommé for dipping. 😚🤌
It starts with toasted chiles, warm spices, garlic, onion, tomato, and enough time for everything to settle into something deep, savory, and just a little smoky. The beef gets tender without falling apart, the cheese melts into the edges, and the consommé brings it all back home with lime, salt, cilantro, and onion.
Messy in the right way. Rich without being heavy. The dip brings it home.
