Over the years the Meat Palace has strived to bring in the best quality meat you can find. All our Beef is USDA Choice, and aged for at least 14 days. If you are looking to stock up, we also sell whole, half and quarters of choice Montana beef. We also have a full counter of pork; anything you desire from chops, roast, ribs to sausage. We have 12 different types of brats that we make daily. We als

o have 10 different smoked sausages that we make in house along with two types of jerky. Old Fashioned means asking the butcher to custom cut your meat. Upon check out, we wrap all your meat in freezer paper to preserve the freshness and quality of the meat. We look forward to seeing you at the Meat Palace! 🔥 STOP TRIMMING THAT BRISKET TOO MUCH! 🔥
One of the biggest mistakes backyard pitmasters make is trimming a packer brisket too aggressively before it hits the smoker.
Why leave more of the brisket intact?
✅ Protects the meat during a long cook – The fat cap acts as insulation and helps prevent the brisket from drying out during those 10-16 hour smokes.
✅ More flavor – As the fat slowly renders, it helps baste the meat and adds rich beef flavor throughout the cook.
✅ Better moisture retention – A little extra fat can mean the difference between a juicy brisket and one that's dry and crumbly.
✅ Prevents overcooking the flat – The flat is the leanest part of the brisket. Leaving some protective fat helps shield it from excessive heat.
✅ You can always trim after cooking – It's much easier to remove extra rendered fat than it is to put moisture back into an over-trimmed brisket.
A good rule of thumb: trim only the hard, waxy fat that won't render and leave about ¼ inch of softer fat on the cap.
