This picture says it all..but I’ll add to it. Friday burger day! Pimento cheese, bacon, lemon aioli, milk bun, chuck patty (21day dry aged), pickled goodies on top. Come see us! 11:30-2:30 for burgers, shops open with lots of other grilling goods until 6.

Our special highlight for today is our newly developed gochujang sirloin and shish*to pepper skewers. In our beef class this week we learned about the different ways you can treat different cuts. We love a good marinade and the summer has us thinking about all the ways to grill.

This week we developed a gochujang (Korean chili paste) marinade. So delicious. We marinade our sirloin in this, skewered it with shish*tos peppers and they are fantastic r and n the grill. Come grab a pack!

We are still stocked up on lots of beef steaks, chuck burger patty’s, bbq pork spareribs, bacon cored smoked pork chops, lamb goodies, and pastured raised chicken.

Sandwich today is showing off our smoked bologna with pimento cheese, and arugula on focaccia. Old school classic with a big upgrade!

Friday burgers on the patio! Come grab a burger! 21 day dry aged chuck patty, tallow + milk bread bun, lemon & black pepper aioli, cheddar, and roasted chili agrodulce. And if your feeling it we have an add on of our bacon. 🍔🥓🥓🥓🥓🥓🥓

And our shop is fully stocked up with lots of meaty treats. Marinated lamb chops, chorizo verde, beer bears, lots of burger patty’s, cold smoked bacon pork chops, marinated chicken, lots of other chicken cuts, pastured eggs, beets, spring onions, cucumbers, bevvies. Come see us!

The case is loaded and ready! We received lamb this week and our students have our case stocked up. Calabrian chili marinated lamb chops, basque style lamb meatballs, kefta kebabs, and chops! We’ve also got some BBQ spiced pork ribs, chorizo verde, beer bratwurst, marinated chicken, beef flatirons, most of burger patty’s, and more! Come grab your weekend grilling session.

FRIDAY BURGER POST! We had so much fun last Friday and had a good turn out that we are going to open an hour early tomorrow for burgers again. Come grab one! Chuck patty’s, milk buns, cheddar, lemon aioli, and a roast chili and shallot agrodulce (sweet and sour chili condiment). Open and ready at 11:30!

Burgers on the patio! We are testing out an idea to do burger Fridays this summer. We have developed these delicious milk bread buns with beef tallow, paired with our BW grind, 21 day dry aged ribeye, sirloin, strip loin, and a dash of short ribs. Come get one! Serving them until 3 today.

We are also stocked up on the greats, dry aged beef, pork, chicken, beer brats, burger patty’s, and lots of great charcuterie and deli meats.

Burger time! We’re been planning a burger day tomorrow and wanted to show these lovely buns. We have several great burger grinds in patty form in our shop and thought we’d serve some up as our sandwich tomorrow.

These buns are a milk bread built with beef tallow for that extra beefy punch 👊🍔. The burger will be a 21 day dry aged chuck patty.

So come grab a burger tomorrow! We’re here today too stocked up lots of great larder goods!

Burger days! Schools almost out and the weather is calling for more grilling. We are answering that call with some fun varieties of beef burger grind.

Chuck, BW blend, and a primal grind in patty form. They are all aged 21 days and have great flavor. Come grabs a pack!

Our deli case is still out of commission but we have the meats. If you’re on the hunt for mortadella, bacon, ham or more lets us know and we’ll slice it up for you.

We were cutting more beef for the case today and these dry aged Strip steaks caught my eye.

They are both at 15 day dry aged. We usually push to 21 but sometimes we cut a little early, sometimes a little later. The top one has been fully trimmed but we left the pellicle on the lower one. That’s going to be a personal steak for my own dinner.

The pellicle is a nice way of seeing the age of the beef and what happens during the aging process. It’s not a piece everyone might want but I think it’s delicious. It’s a concentrated texture and flavor of big beefiness. Like a fine wine, salami, or cheese or brings a complexity in a steak you can find at any grocery store.

We are stocked up on lots of dry aged beef, pork, chicken, and sausages. Our deli case is having technical issues but we can still slice whatever you need. Come say hi! And maybe grab a pork chop or steak.
