Chestnut mushrooms: earthy, nutty, and ready for everything from breakfast eggs to pasta night.

Sauté them in butter with garlic and thyme until deeply browned, then finish with a splash of white wine or soy sauce. Spoon over toasted sourdough with goat cheese, toss with fresh pasta, or pile onto a burger. They’re also fantastic roasted whole alongside carrots and onions.
