RECIPE — Makes 24 bites
🍉The Bites
1 small seedless watermelon, cut into 1-inch cubes
8 oz block feta cheese, cut into ¾-inch squares
24 small fresh mint leaves
24 wooden toothpicks
🍯 Hot Honey
⅓ cup raw honey
½ tsp red pepper flakes
½ tsp apple cider vinegar
🌿 Lime Pistachio Crunch
¼ cup pistachios, finely chopped
½ tsp lime zest
1 pinch flaky sea salt
Directions:
1️⃣ Simmer honey, pepper flakes & vinegar over low heat for 3–4 min. Cool completely.
2️⃣ Mix pistachios, lime zest & sea salt. Set aside on a small plate.
3️⃣ Pat watermelon cubes dry on a paper towel-lined tray.
4️⃣ Stack feta on watermelon, top with a mint leaf, secure with a toothpick.
5️⃣ Dip the watermelon base into the pistachio crunch. Arrange upright on your platter.
6️⃣ Drizzle hot honey generously just before serving. Garnish with fresh mint sprigs.
