Ingredients
For the Sheet Pan
1 lb. fully cooked chicken apple sausage, sliced on a slight diagonal into ΒΎ- to 1-inch pieces
1 large sweet potato, peeled and cut into ΒΎ-inch cubes (about 3 cups)
12 oz. Brussels sprouts, trimmed and halved
1 medium red onion, cut into 1-inch pieces
2 medium crisp apples, such as Honeycrisp, Pink Lady or SugarBee, cored and cut into 1-inch chunks
3 tablespoons avocado oil or olive oil, divided
1 teaspoon garlic powder
1 teaspoon dried thyme
Β½ teaspoon smoked paprika
ΒΎ teaspoon fine sea salt, plus more to taste
ΒΌ teaspoon black pepper
Maple Dijon Sauce
2 tablespoons Dijon mustard
1Β½ tablespoons pure maple syrup
1 tablespoon apple c***r vinegar
1 tablespoon olive oil
1 small garlic clove, finely minced or grated
Pinch of fine sea salt
Black pepper, to taste
Instructions
Preheat the oven to 425Β°F. Lightly grease a large rimmed sheet pan. You can also line it with parchment paper for easier cleanup, although an unlined metal pan will give you better browning.
Give the sweet potatoes a head start. Add the cubed sweet potatoes to the sheet pan. Drizzle with 1 tablespoon of oil and season lightly with salt and pepper. Toss to coat, spread into a single layer and roast for 10 minutes.
Remove the pan from the oven. Add the Brussels sprouts, red onion and chicken apple sausage. Drizzle with another tablespoon of oil and sprinkle with the garlic powder, thyme, smoked paprika, salt and black pepper.
Toss everything together and spread into an even layer. Arrange as many sausage pieces as possible with a cut side directly against the pan to help them brown. Return to the oven and roast for another 10 minutes.
While everything is roasting, prepare the Maple Dijon Sauce. Whisk together the Dijon mustard, maple syrup, apple c***r vinegar, olive oil, garlic, salt and black pepper until smooth.
Remove the sheet pan from the oven and add the chopped apples. Drizzle with the remaining tablespoon of oil and about half of the Maple Dijon Sauce. Gently toss everything together and spread it back into an even layer.
Return to the oven and roast for another 12β15 minutes, or until the sweet potatoes are fork-tender, the Brussels sprouts are browned, the apples are tender but still hold their shape, and the sausage is nicely browned around the edges.
Drizzle the remaining Maple Dijon Sauce over everything and serve warm.
