Spatchcock Chicken 101 with Butcher Rusty! Spatchcock Chicken, butterflying the chicken by removing the backbone, cooks in about half the time of roasted chicken. This style of cooking chicken also increases the surface area and cooks more evenly; great for cast iron cooking and grilling.

We exclusively source our chicken from Springer Mountain Farms in Georgia. Why? Because it’s All-Natural, Hormone Free, Antibiotic Free, and best of all, it tastes delicious! Springer Mountain Farms chicken is juicy and flavorful and is our favorite chicken.

The sirloin steak and sirloin filet come from the hindquarter: lean, balanced, and full of clean beef flavor, with little excess fat.

The sirloin steak has a bit more structure and does well on a hot grill. The sirloin filet is trimmed down for a more tender, refined bite.

How we cook it:
Salt it well, bring it to room temp, and cook it hot and fast: grill or cast iron. Take it to medium-rare to medium, then let it rest before slicing (especially the sirloin steak, cut against the grain)
