Pork belly is rich, beautifully marbled, and one of the absolute most rewarding cuts in our case when the weather turns crisp. Because of all that natural fat and tender meat, it loves a slow cook—giving the fat time to render down so the meat becomes melt-in-your-mouth tender with razor-crisp skin on top. Cook it too fast over high flame and the fat flares up, but give it a slow roast in the oven or smoker, and it turns into pure comfort food.
Slice it thick over warm savory sides, drizzle with a little local maple syrup or apple c***r glaze, and serve it alongside a cold regional ale from our cooler. That is an autumn feast done right at home.
