Bucatini con Colatura e uovo. Butter, Olive Oil, Garlic, Chili, Egg,Colatura, Parsley, breadcrumbs

Radiatori con Pesto di Bietola. E Rainbow Chard, Pistachio, Lemon, Pecorino Romano, Grana Padano.

The ruffled edges of Mafaldine are said to represent the fine embroidery on royal dresses. Watch it dance out of the extruder 💃

Originating in Naples, and named in honor of Princess Mafalda of Savoy in the early 1900s, this cut is also known as Reginette, which means “little queens.”

Those edges hold onto rich, heavy sauces beautifully. Think slow-cooked ragù and creamy sauces. Mafaldine alla Napoletana is usually served with a tomato sauce or ragù with creamy fresh ricotta.

We’re getting a salty, umami flavor from our anchovies, brought together with broccoli rabe’s classic bitterness (which we LOVE)… just enough of a kick from the chili, and topped off with crunchy focaccia breadcrumbs!!! 🤤
