and the Canyon Farmers Market
is the penultimate example of one of the best reasons Canyon America does small town so well. Great city. Special Farmers Market. The Canyon Moon Market was a great place to be last night. I’m sure the thousands and thousands of people who came would say the same thing.

Such exciting news! We now carry Heritage & Ancient Grains! Find them at Robinson Family Feed Store and through our website. We have Khorasan (rich and nutty) White Sonora (tortillas anyone)and Rouge de Bordeaux (think French bread) along with Black Sorghum (antioxidants galore) It has taken us awhile to gain enough momentum to bring the ancients into the mill! That’s a wrap on Grain to Loaf.

Today at Robinson’s Family Feed, Suzan walked our students through every step from grain to loaf: milling whole grain into fresh flour, mixing and resting the dough, kneading, shaping, and two rises. While the dough set up, we talked about how we source our grains, how blends are built for the bread you want, and how mill settings change the flour.

Fresh-milled flour doesn’t behave like the bag from the store. Now our students know what it needs, and they went home with 4 cups of stone-milled flour and the recipe to prove it.

Our Wholegrain Country Sandwich Loaf is the bread we bake in our Grain to Loaf class. Mill hard white wheat for rise and soft white wheat for a tender crumb, then add honey and olive oil. Mild, a little sweet, and made for sandwiches and toast.

Our first ancient grain is here.

Khorasan wheat berries, grown on one farm in Montana and packed whole for your home mill. The kernels are about twice the size of modern wheat, and the flour comes out golden with a smooth, buttery flavor.

Bake a soft sandwich loaf that toasts beautifully. Roll out fresh pasta. Try it in sourdough, pizza dough, cookies, or pancakes. Or cook the whole berries and toss them into a grain salad.

One tip: Khorasan drinks more water than you expect, so the dough will feel wetter. That's normal.

You may know it from the KAMUT® brand. Same ancient grain family, sold here under its own name.
