There's something deeply satisfying about a meal where you can account for every single ingredient on the plate.
Lamb burger made from ground off cuts — from our own lamb, butchered right here on the farm last year. Roasted potatoes with homemade ketchup made from last year's tomatoes, not a red paste from China like you'll find in every commercial bottle on the shelf. A pile of fermented cabbage on the side.
No mystery meat. No supply chain. Just an animal that lived a good life, a butchery day we did ourselves, and off cuts that deserved better than being wasted.

Ours comes from a neighbour we trust — fresh, raw, and full of everything nature intended. From there, we do what we love: press, age, and finish each round by hand with smoked paprika and chive flowers picked right here on the farm.

🌿 Elderflower Season is Here
The elder trees are in full bloom and we've been out at first light, harvesting these extraordinary flower heads before the heat of the day sets in.
There's a reason we forage elderflower in the early morning — and it's not just the quiet and the birdsong (though that's a gift in itself). The volatile aromatic compounds that give elderflower its iconic muscat scent are most concentrated in the cool of the morning. Once the sun climbs and the temperature rises, those delicate fragrant oils begin to dissipate. Harvest too late, and you lose the very thing you came for.
We pick the heads when they're just fully open — creamy white, pollen-heavy, and fragrant — never after they've started to brown or drop. That moment is brief. A week, maybe two, and it's over for another year.
Elder (Sambucus nigra) has been a cornerstone of traditional European herbalism for centuries. The flowers are gently anti-inflammatory, supportive of the respiratory system, and have long been used to ease seasonal colds, fever, and congestion. Rich in flavonoids and antioxidants, they are one of nature's quiet powerhouses — and one of the most generous gifts the hedgerow offers freely.
This harvest is going straight into a raw elderflower syrup — simple, traditional, no shortcuts. Flowers, raw sugar, lemon, and time.
