Humidity ruins good nuts. Here’s how to stop it.

Monsoon season, and it doesn’t matter if you’re in Karachi, Lahore or Islamabad damp air is the enemy of a good almond. Four things that actually work:

1. Airtight glass, not plastic. Plastic breathes and holds moisture.
2. Almonds, walnuts and pistachios belong in the fridge once opened, their oils turn rancid in heat before they ever go stale.
3. Never store nuts next to spices. They absorb aroma.
4. Buy smaller quantities more often. Freshness beats stockpiling.

Ours arrive sealed for exactly this reason.

Save this before the next downpour.

Three ingredients. One blender. Better than any energy drink.

Anjeer & date shake:
— 3 dried figs, soaked overnight
— 4 dates, pitted
— 1 cup cold milk
— a pinch of cardamom

Blend. Pour over ice. Done in ninety seconds.

No refined sugar, no syrup, nothing artificial. Iron, fibre, potassium and enough natural energy to get through the afternoon.

Save this, and tag whoever in your house says they don't have time for breakfast.

Karachi's heat has a remedy older than air conditioning.

Gond katira. Soak a teaspoon overnight, and by morning it's a soft, cooling gel — stirred into milk, lemonade or falooda.

Generations here have used it through the worst of the summer for a reason. It cools from the inside, not just the surface.

Pure, unprocessed gond katira. Cleaned and sealed, the way it should be.

The cheapest thing in your kitchen is also the best thing for this heat.

Tukh malanga. A teaspoon soaked in water swells into soft, cooling seeds in ten minutes, stir into lemonade, milk or plain water with a squeeze of lemon.

It cools the body, it helps digestion, and it keeps you full through a long Karachi afternoon. Generations here have known this without needing to be told.

Clean, sifted tukh malanga. Sealed fresh.
