1. Kaldereta (Beef Caldereta)

2 lbs beef (cubed)

3 cloves garlic (minced)

1 onion (chopped)

½ cup liver spread

1 cup tomato sauce

2 cups beef broth or water

2 cups potatoes (cubed)

1 cup carrots (sliced)

1 red bell pepper (sliced)

1 green bell pepper (sliced)

½ cup green olives (optional)

1 tsp chili flakes (optional)

2–3 bay leaves

Salt and pepper to taste

Cooking oil

2. Sinigang (Pork Sinigang)

1 kg pork belly or ribs

1 large onion (quartered)

2 large tomatoes (quartered)

1 pack sinigang mix (tamarind-based) or fresh tamarind

1 daikon radish (sliced)

1 cup string beans

1 eggplant (sliced)

1 bunch kangkong (water spinach)

1–2 pcs long green chili (optional)

1.5–2 liters water

Fish sauce or salt (to taste)

3. Pancit Bihon Guisado

250g bihon (rice noodles)

2 cloves garlic (minced)

1 onion (sliced)

200g chicken or pork (sliced)

½ cup shrimp (optional)

1 carrot (julienned)

1 cup cabbage (shredded)

¼ cup soy sauce

1 tbsp oyster sauce (optional)

1½ cups chicken broth or water

Calamansi or lemon (to serve)

Cooking oil

Salt and pepper to taste

4. Kare-Kare

1 kg oxtail (or beef tripes, shank, pork leg)

1 banana blossom (optional)

1 bundle string beans (cut)

1 eggplant (sliced)

1 banana heart (sliced, optional)

1 bundle pechay or bok choy

1/2 cup peanut butter

1/4 cup ground toasted rice

2 tbsp annatto seeds (soaked in hot water)

1 onion (chopped)

3 cloves garlic (minced)

6 cups water

Salt or fish sauce to taste

Shrimp paste (bagoong) for serving

1 kg beef chuck (cubed)

1 large tomato (chopped)

1 onion (chopped)

2 tbsp soy sauce

1 tbsp calamansi or lemon juice

1½ cups tomato sauce

2 medium potatoes (quartered)
