Cashew Cream Cheese

Ingredients:
• 1 cup raw cashews (soaked for 2–4 hours or overnight)
• 2 tbsp lemon juice
• 1 small garlic clove
• 2 tbsp olive oil (or any neutral oil)
• 2–4 tbsp water (adjust for consistency)
• ½ tsp salt (adjust to taste)

Instructions:
1. Soak Cashews: Drain and rinse the soaked cashews.
2. Blend: In a blender or food processor, add cashews, lemon juice, garlic, olive oil, and salt. Blend until smooth.
3. Adjust Consistency: Add water, one tablespoon at a time, until you get a creamy, spreadable texture.
4. Taste & Adjust: Add more lemon, salt, or garlic if needed.
5. Chill & Serve: Transfer to a container and refrigerate for at least 1 hour to let the flavors meld.

This cashew cream cheese is perfect as a spread, dip, or even a dairy-free alternative in recipes! You may also customize it with herbs or other flavors. 😉
