How we cook our Pork Tenderloin cut
In this video, we cook one of the most premium cuts from our Clean & Happy Pigs, the pork tenderloin.
Raised in a stress-free, super clean environment at Grace Forest Farm, our pigs produce naturally tender meat with beautiful texture and flavor. When pork is raised correctly, you don’t need heavy seasoning or complicated techniques.
We’ll show you:
• How we prep the whole tenderloin
• Proper searing technique
• Resting time (this is critical)
• How to slice it perfectly
• Optional pan sauce using natural drippings
🥩 PORK TENDERLOIN RECIPE (Pan Method – No Oven Needed)
Step 1: Seasoning
• Generously season with salt and pepper
• Let rest at room temperature for 30 minutes before cooking
This allows the seasoning to pe*****te and ensures even cooking.
Step 2: High Heat Sear
• Heat pan on high flame
• Sear 2 minutes per side (4 sides total)
Goal: Develop a deep golden crust. Do not move it too much. Let the Maillard reaction do the work.
Step 3: Controlled Finish (Oven Replacement Method)
Instead of transferring to a 180°C oven for 10–15 minutes:
• Lower the flame
• Cook 1 minute per side on low heat
This gently brings the internal temperature up without drying the meat.
Step 4: Resting (Non-Negotiable)
• Remove from heat
• Rest for 10 minutes
Resting allows juices to redistribute. Skip this and you lose moisture. Period.
🍷 Pan Sauce (Using Natural Drippings)
Do NOT wash the pan.
1. Pour red wine into the same pan
2. Let it reduce by half
3. Add chicken stock or pork stock
4. Simmer and reduce slightly
5. Finish with butter and a splash of cream
6. Season to taste
Strain if desired. Spoon over sliced tenderloin.
