Cured Ham

Ingredients:

• 18 ounces kosher salt

• 2 cups brown sugar

• 7 teaspoons pink salt #1 (curing salt)

• 1 tablespoon pickling spice, or to taste

• 6 quarts water, divided

• 1 (7 pound) fresh, bone-in pork shoulder ("picnic") arm roast, with the skin still on

• 1 cup water, or as needed

• 2 whole star anise

Optional Glaze:

• ¼ cup Dijon mustard

• ¼ cup maple syrup

Skinless Longganisa, a Filipino sausage, is known for its sweet and garlicky profile. Shaped like logs, it's simple to prepare without the need for hog casings or specialized equipment.

WHAT IS LONGGANISA?
Longganisa comes from the Spanish word "longaniza," a sausage that can be fresh, cured, or smoked. In the Philippines, there are several varieties specific to different regions. They are made with a generous amount of garlic and can either be savory (de recado) or sweet (hamonado).

Longsilog is a beloved Filipino breakfast with longganisa, Sinangag (Garlic Fried Rice), and itlog (fried egg), served with Achara (Pickled Green Papaya) and a spiced vinegar dipping sauce.

From breakfast to dinner, and even dessert, bacon is an all-time favorite. With our recipe, you can make your own bacon at home. By making your own tasty bacon, you can decide what's in it—meat from pastured, organically fed animals, if you like.

Although the process is lengthy, curing and cooking your own bacon yields flavorful and even tastier bacon than store-bought. So few people cure their own bacon or salt pork at home that some butchers don't carry fresh pork belly. Order yours ahead from a local farm or butcher.

While most commercial bacon in the United States is smoked, bacon and many of its cured-meat cousins in other countries are cured but not smoked. With bacon, the smoking step is more about adding flavor than it is about preserving the meat. Smoked or unsmoked? That's up to you. Our recipe gives you a choice to use the smoker or to cook the bacon in the oven. For the smoker version, we recommend hickory or applewood shavings for the best flavor.

Curing meats without expertise and care can lead to a product that is harmful to human health. We encourage you to consult and study the proper techniques, follow the USDA's guidelines for cured and dried meats, and have at hand a meat thermometer. Because bacon is not eaten raw, using curing salt, or nitrates, is up to you.

Drying & Dehydration

Introduction:
Drying and dehydration are related terms and are used interchangeably to describe the unit task involve in the removal of water by ev***ration or sublimation.Drying generally refers to the method of removing moisture from food under natural conditions such as sunlight and wind, such as open sun dry and shade drying. Whereas, dehydration refers to the process of removing moisture by artificial heat under controlled conditions(temperature,humidity,and airflow).

Drying or dehydration involves the removal of water from food by heating. When hot air is passed over wet food, the air expands through a boundary film of water v***r surrounding the food and is carried away by air. A water v***r pressure gradient is established from the moist interior of the food to the dry air, which provide the drying force for the removal of water from the food.The boundary film acts as a barrier to both heat transfer and water v***r removal during drying. The moving air velocity determines the thickness of the boundary film.The water v***r leaves the surface of the food and increases the humidity of surrounding air, thereby decreasing the water v***r pressure gradient, thereby reducing the drying rate.Therefore, the moving air must be fast to reduce the thickness of the boundary film and achieve a faster drying rate.Therefore, the parameters that are taken into account for drying moist horticultural products are moderately high dry bulb temperature, low relative humidity, and high air velocity.

Salted egg

Introduction:
-Salted egg is a processed duck egg and very popular in China and in other Asian countries. Whole eggs are consumed as part of a regular diet, whereas yolks of salted eggs (YSE) are also used as stuffing in some food products, such as moon cake and other desserts and glutinous rice dumpling.

-Salted egg was originated in China, they've gone on to become a staple in many countries across Asia, from Singapore, to The Philippines.

Where did salted eggs come from in the Philippines?

-During the sixteenth century, the practice of making incubated eggs was believed to be brought by Chinese traders to the Philippines when they settled along the shorelines of Laguna de Bay.

Why is salted egg so popular?

-The salted egg yolks are popular among consumers because of their unique quality of “vermillion oil and fluffy” after being pickled with salt and heated, and are widely used in making egg yolk pastry, mayonnaise, ice cream, and biscuits; the salted egg whites can be used in the production of other food products.

Why are salted eggs healthy?

-Salted eggs have several benefits. They can improve the nutritive value of the egg and are alkali-free, with a solidified yolk that is soft and tasty. Salted duck eggs have the efficacy for eliminating nitrite and are high in trace elements, with improved flavor and a prolonged shelf life.

On one hand, salted eggs are a good source of protein and essential amino acids, which are important for building and repairing tissues in the body. They also contain some vitamins and minerals, such as vitamin B12, selenium, and phosphorus.
