Not sure about you, but the older I get, the simpler the food - the better. This is clearly an extreme version of simple, but when the ingredients stand out for themselves you don’t need much else.
Tonno Callipo have long been one of my favourites. They have been processing in Calabria, since 1913. I used to love the soft tuna in the bottom of the tin, bathing in all the oil. I still do. But this tuna is something else. Not the watery kind you find in the supermarket. Fleshy, clean and so flavoursome. Nicoise, Vitello Tonnato, Tuna Melt, whatever your favourite , I promise this is the Tuna you need x
