Made in small batches using 100% New Zealand-grown durum wheat, milled fresh and extruded the traditional way so sauces cling exactly how they should.

Why it’s delicious:
• Bronze-cut for a rough, sauce-loving texture
• Slow-dried at low temperatures
• Made with regeneratively grown NZ durum wheat
• No fillers, no shortcuts, no nonsense.

There durum wheat is grown and milled on the sunny plains of the Wairarapa by their friends at the Wairarapa Grains Collective. Back in 2019, test plantings showed this ancient grain, dating back 10,000 years, absolutely thrives in their famously hot, dry summers. High in protein and fiber, durum wheat is gentler on your stomach than other grains, so you'll feel great after your meal.

The wheat is planted using a no-till, soils-first approach that reduces erosion, minimises carbon emissions, and preserves the soil's natural microbiomes. It's all about protecting the land they love while creating healthy, delicious pasta.

Matakana Smokehouse is a small, family-operated smokehouse just out of Matakana Village.
Using only the best sustainably farmed and caught products and practicing longstanding smoking traditions - there cutting, smoking and brining is all done carefully by hand, ensuring the finest finished product.
They work with Akaroa Salmon, one of the last family run farms in New Zealand to source their Salmon. The salmon is fed an antibiotic free diet of only fish protein and the salmon are fed a low energy, slow grow diet to ensure the fat/oil percentage is similar to that of wild Salmon.
