1. Roast the walnuts
Preheat the oven to 325°F (160°C). Spread the walnuts on a baking sheet and roast for 10 minutes, until lightly golden.
2. Prepare the vegetables and other ingredients
- Cut the fennel bulb in half. Place the flat side on a mandoline and slice very thinly. If you don’t have a mandoline, chop the fennel into very small pieces.
- Slice the celery diagonally into thin pieces.
- Cut the cabbage into thin strips.
- Dice the avocado.
- Chop the dates into small pieces.
- Finely mince the shallot.
- Zest the lemon and squeeze out the juice.
3. Mix the salad
Place all the chopped vegetables in a large mixing bowl. Season with pepper and salt to taste. Add the dates, lemon zest, lemon juice, shallot, olive oil, and roasted walnuts. Top with the grated Parmesan cheese.
4. Finish and serve
Toss everything well with your hands or a large spoon to combine. Serve immediately and enjoy a fresh, crunchy, and nourishing salad.
