"Why is there water on the top of this yoghurt?"
I have heard people ask me this countless times and I want to explain here.
A quality yoghurt is made with treated water, milk, lactobacillus and flavours (optional).
After fermentation, the water turns to whey which is a very good source of protein.
Naturally, yoghurts will have whey loosely settled on the top of a bottle just like when palm oil has a thick part and an oily part.
Now, some vendors can add binding agents like cornflour or CMC to bind the whey to the creamy part.
However, we don't do that here in VHH Pastry. We allow out yoghurt to form naturally without additives or binding agents.
So when next you see a yoghurt with water settling on the top, it has not spoiled. That is whey protein begging you to take a sip.π₯
