Mediterranean Pasta Salad with Artichokes
Ingredients
12 oz rotini or penne pasta
1 cup marinated artichoke hearts, quartered
1 cup cherry tomatoes, halved
½ cup Kalamata olives, pitted and halved
½ cucumber, diced
½ red onion, thinly sliced
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
For the Dressing
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon dried oregano
Salt & black pepper to taste
Directions
Cook pasta according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine pasta, artichoke hearts, tomatoes, olives, cucumber, red onion, feta, and parsley.
In a small bowl or jar, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
Pour the dressing over the salad and toss well to combine. Chill in the fridge for at least 30 minutes before serving.
