Pepper Soup is a popular Nigerian dish known for its spicy and aromatic flavors. It can be made with various types of meat, including goat, fish, chicken, or even assorted meat.
Here's how to prepare Goat Meat Pepper Soup in a traditional Nigerian way:
INGREDIENTS
1 kg goat meat (cut into bite-sized pieces)
2 tablespoons ground pepper soup spice mix (a blend of spices such as calabash nutmeg, uziza seeds, and others)
2-3 fresh Scotch bonnet peppers (or to taste), chopped
1 medium onion, chopped
2 cloves garlic, minced
1 thumb-sized piece of ginger, minced
2-3 tablespoons crayfish (ground)
2-3 seasoning cubes (Maggi or Knorr)
Salt to taste
2-3 liters of water
Scent leaves or basil leaves (fresh or dried), chopped
Optional: additional spices like alligator pepper or African black pepper
Instructions:
PREPARATION
Wash the goat meat thoroughly and place it in a large pot.
Add the chopped onions, garlic, ginger, and seasoning cubes.
Pour in enough water to cover the meat, about 1-2 liters.
Bring to a boil over medium-high heat.
Cook the Meat:
Once the pot is boiling, reduce the heat to medium and let it simmer for about 30-40 minutes or until the goat meat is tender. You may need to add more water if it reduces too much.
Add Spices:
Add the ground pepper soup spice mix, chopped Scotch bonnet peppers, and ground crayfish to the pot.
Stir well to ensure the spices are evenly distributed.
Season the Soup:
Taste the soup and adjust the seasoning with salt and additional seasoning cubes if necessary.
Continue to simmer for another 10-15 minutes, allowing the flavors to meld together.
Finish and Serve:
Add the chopped scent leaves or basil leaves to the soup.
Stir and let it cook for another 5 minutes.
Remove from heat and let it sit for a few minutes before serving.
Serve:
Serve the pepper soup hot, preferably with a side of white rice, yam, plantains, or bread.
TIPS:
The spice mix can be purchased from Nigerian food stores, or you can make your own by grinding together a mix of calabash nutmeg, uziza seeds, alligator pepper, and other local spices.
Adjust the level of heat by varying the number of Scotch bonnet peppers according to your taste.
