This week, I’m replenishing…❤️🌱
The best foods to eat are life-giving and restorative foods. This meal was made with intention for nourishment, replenishment and healing.
The avocado is rich, buttery, and generous, providing healthy fats that nourish the brain, support the heart, and leave the skin glowing from within.
The soy mince with green peas and white beans is plant protein in its fullness, building, repairing, and sustaining the body. The peas add a gentle sweetness while the beans ground the meal with fibre, creating balance.
Tomatoes, onion, and garlic add both flavour and function. They are vibrant and protective, supporting immunity while enriching the dish with depth and brightness.
The rinrin leaves, also known as pepper elder or shiny bush, scientifically called Peperomia pellucida, bring freshness in its purest form. Though delicate, they are rich in antioxidants and known for their anti inflammatory and healing properties, supporting the body in gentle and natural ways. These leaves can be found in every garden and are usually mistaken for weeds. Don’t sleep on the benefits of this powerhouse!
Then comes the homemade hummus, creamy and comforting, tying everything together. It adds richness while still keeping the meal wholesome and nourishing.
I’m finishing it off with a warm cup of unsweetened raw cocoa and oat milk, rich in antioxidants and calming to the body, a gentle close to a nourishing experience.
This is not just a meal. It is restoration. It is balance. It is a conscious choice to pour back into yourself, one mindful bite at a time.
