Coconut Nigerian Chicken Stew

Coconut Nigerian Chicken Stew is a flavorful twist on the classic Nigerian Chicken Stew. The coconut milk adds creaminess to the dish while the spices give it a unique taste. Here’s what you will need:

1 kg chicken or as much as you want.

large ripe tomatoes

red bell peppers

2scotch bonnet peppers

onions

cloves of garlic

inch piece of ginger (Not a fan of ginger)

tbsp of curry powder

tsp of thyme

bay leaves

stock cubes

cup of vegetable oil

Salt to taste

cup of coconut milk

Instructions:

Clean and cut the chicken into small pieces. Season with salt and set aside.

Blend the tomatoes, red bell peppers, scotch bonnet peppers, onions, garlic, and ginger in a blender.

Heat the vegetable oil in a pot and add the blended mixture. Cook for about 20 minutes, stirring occasionally, until the mixture thickens.

Add the curry powder, thyme, bay leaves, and stock cubes. Stir well and cook for another 5 minutes.

Add the chicken to the pot and stir well. Cover the pot and let it simmer for about 25 minutes or until the chicken is fully cooked.

Stir in the coconut milk and adjust the seasoning with salt if necessary.

Remove from heat and serve hot with rice or any other starchy food of your choice.
