Augustine Smokery Augustine Smokery is a home-based gourmet food project based in Setia Alam aimed at sharing smoked delicacies to Malaysian foodies! From NZ to Msia!!

The craft of Smoking Salmon has its roots in history as a method of preservation. But in modern times, it has evolved to place emphasis on flavouring the fish instead. To enhance its flavour, every Salmon is cured prior to smoking with a salt cure mixture to reduce its water content. Then, smouldering wood chips are carefully handled to provide the smoke source and temperature for the foods to be

roasted. Precision here is vital as the texture and taste of a Smoked Salmon can vary greatly depending on the timing and temperature of the process. Being a traditional craft, the quality of the smoked product heavily depends on the care taken at each step of the process – from sourcing and the selection of materials, through preparation and the smoking, and finally to delivery.

Notice - We would like to take this opportunity to thank everyone for the overwhelming support given to our first year of "lap cheong" and "yun cheong" production. With only 10 days from new years eve, the liver sausages have been completely sold out and we are left with a few strings of red lap cheongs' left. Let's look forward to the next lunar new year for this seasonal produce!

Much of what we do today isn't that different from our forefathers, although we have transitioned mostly to curing and smoking fish. What is "Hot" Smoked Salmon? A question asked frequently by our clients. Here at the Smokery, we think of it as an alternate rendition of the smoked salmon with the fact that it is cooked by high temperature smoke resulting in a product with a smokey...flakey fish product. Often eaten on its own with a host of condiments, it can also be served in Japanese Ochazuke. (お茶漬け). We have chazuke quite often ourselves!

The pancetta affumicata (aka smoked pancetta), will be the first of many cured meat products to be launched. Orders begin shipping starting mid December.
