Our production methods are deeply inspired by the time-honored traditions of medieval European monasteries. To honor this history, each of our cheeses is named after local monastic orders!

Our lead Cheese Maker, Mark Xerri, spent over three decades collaborating with master cheese makers across Italy, Austria, Germany, France, Denmark, and the Netherlands. He brought those European secrets home to Malta to create something truly unique.

By focusing entirely on controlled fermentation, Mark achieves the perfect balance of aromas and textures without adding any herbs, spices, or nuts. It is the pure, sophisticated expression of premium local milk.
