Instructions: Steam chicken legs in a steamer for 10-15 minutes after the water boils. Steam for a shorter time if you prefer them tender. After steaming, remove and place in ice water. For the sauce: Mix half a bottle of the dressing shown in picture one with a little sesame oil, a little soy sauce, and a little Sichuan peppercorn oil. Shred the chilled chicken legs into strips, add sliced onions, scallions, and cilantro, and pour the sauce over them. Mix well. For a spicy flavor, add minced garlic and chili sauce, then pour hot oil over it.
