Roy made sausages I’m Roy, I make homemade premium sausages. And serve them in sandwiches or deliver them raw, ready to be cooked. From scratch.

Like I just said:
I make sausages, meaning they’re homemade, artisanal sausages. Which keeps me in control of what’s in them, so:

So you've witnessed me pull the plug last year on Roy made sausages when I announced that I was leaving to study in Brussels. However, I never expected my student visa to be refused and having to stay. So a few months later (and after healing from an accident that took place during the same time. Yes that also happened) I reopened Roy made sausages and picked up from where I left off.
This summer, my student visa was granted after a legal battle with the Belgian authorities that lasted for months. So I bought my ticket and Im leaving in mid August.
That being said, this is the last big batch of sausages I plan on making (I might make a small batch during the last week of July). And I'm taking it to Souk el tayeb this Saturday which is tomorrow! And will, of course be making sandwiches and rillettes on toast. See you there :)

2 months ago, I bought a few beautiful looking fresh cabbages from and turned them into sauerkraut. It was supposed to be the batch of the year... until this happened.
Never thought id turn them into sausages, until I was having some verbena tea and a bulb lit up!
That said, catch me this saturday for this month's new spesh: Pork, sauerkraut and verveine.

Sausage lovers and friends, this may not come as a surprise to many of you as you've already heard, but I will have to put "Roy made sausages" to an indefinite hold. Soon. Probably by the end of the month or the first week of August.
It's a painful step to make, but it's also something that needs to be done.
If you'd like to stock up on some sausages, you know how they freeze well.

I was asking myself a couple of weeks ago: What is this season's most valuable harvest? BOUSFEIR! Lit a lightbulb. So I ran and bought some from , mixed them up with my own dijon, or whatever you want to call it, and stuffed them in pork casings for a thick, moist and juicy sausage.
