Ragi Cookies

Great Recipe

Ingredients:
• Ragi flour – 1 cup
• Whole wheat flour – 1 cup
• Cocoa powder – 1/4 cup
• Jaggery powder – 1 cup
• Ghee – 1/2 cup
• Baking powder – 1/2 tbsp
• Milk – 6–7 tbsp
• Vanilla essence – 1 tsp
• Choco chips (optional)

Method:
1️⃣ Take a bowl and add jaggery powder, ghee, and vanilla essence. Mix well.
2️⃣ Add ragi flour, whole wheat flour, cocoa powder, and baking powder. Mix to get a sandy texture.
3️⃣ Add milk and make a soft dough (neither too hard nor too soft).
4️⃣ Pinch small balls, roll in palm, and shape into cookies. Add choco chips on top.
5️⃣ Preheat airfryer and bake at 160°C for 20 minutes.
6️⃣ Check and bake another 5–10 minutes if needed.

Jowar set dosa

1/2 cup urad dal
1/4 cup chana dal
1/2 tsp methi seeds

1 cup jowar atta
Salt to taste
Ghee
Red chilli powder
Coriander leaves

Method
1. Soak the Dals
• In a bowl, mix urad dal and chana dal.
• Wash the dals 2-3 times with water.
• Add fenugreek seeds and soak everything in water for 2-3 hours.
2. Blend the Dals
• Drain the water and add the soaked dals to a blender jar.
• Add a little water and blend into a smooth paste.
3. Prepare the Batter
• In a large mixing bowl, add jowar flour.
• Gradually add water and mix with your hands to form a smooth paste.
• Add the blended dal paste to the jowar flour mixture.
• Mix everything well with your hands. Hand-mixing helps in a better fermentation process.
4. Fermentation
• Cover the bowl and let the batter ferment for 7-8 hours.
5. Cook the Dosa
• After fermentation, add salt to the batter and mix well.
• Heat a non-stick pan and grease it lightly.
• Pour a ladleful of batter onto the pan and spread it slightly to form a small, thick dosa (like a set dosa or uttapam).
• Drizzle some ghee on top.
• Sprinkle red chilli powder and chopped coriander leaves over the dosa.
• Cook until the bottom is golden brown and the top is set.
• Flip and cook for another minute if desired.
Serving Suggestion
Serve hot with coconut chutney or any other chutney of your choice.
Pro Tip
The batter can be stored in the refrigerator for 3-4 days. You can also use it to make idlis, uttapams, paniyarams, or dhoklas.

Broccoli oats jowar chilla

Ingredients:
- 1 broccoli (with stem)
- 1 cup oats
- 1/2 cup jowar flour
- 1/4 cup rice flour
- Salt to taste
- 1 green chili
- Handful coriander leaves
- 1/2 tsp cumin
- 1.5 cups water

Method:
1. Clean the broccoli thoroughly and blanch it in boiling water.
2. Once blanched, blend the broccoli into a paste.
3. In a bowl, mix the broccoli paste with the rest of the ingredients to form a batter.
4. Heat a greased tawa and pour the batter onto it.
5. Cook the chilla on low heat until both sides turn golden brown.
6. Serve hot with your favorite chutney and enjoy!
