Sarah Butler's Frankenstein Rice Krunchies are a frightfully fun Halloween treat for the little monsters and grown-ups alike.

Ingredients
3 tbsp Butter
1 tsp Green Food Colouring
100 g Marshmallows
140 g Rice Krunchies
To decorate
1 measure Black Food Colouring gel
1 handfull Chocolate & Mixed Sprinkles
20 - Edible Eyes
100 g Milk Chocolate melted
20 - Mini Rolos
1 bag Pretzel Sticks

Method
In a large saucepan, melt the butter and add the marshmallows on medium heat until they melt entirely.
Add the rice krunchies to the saucepan with the food dye and mix everything until you achieve an overall green colour.
Line an 8x10-inch tin with parchment paper and pour the mixture into it.Press the mixture evenly into the tin with a sheet of parchment paper on top. Refrigerate until set.
Cut it into 10 rectangular pieces.
Dip the top into the melted chocolate for the hair and roll in sprinkles. Use the melted chocolate as glue to stick on the rolos on each side, the eyes and the eyebrows. Make a mouth with the colouring gel.
Refrigerate to set.

Johnny Keegan

We are extremely saddened to learn of the passing of our colleague and friend, Johnny Keegan.

Johnny was an integral part of our family throughout our time in Rathdowney, in one way or another.

For a good many years, Johnny delivered the post to us on a daily basis. On the day he retired from An Post, we were delighted to offer him a position with us — and what a great decision that was!

Rain, hail or shine, the people of Rathdowney and the surrounding areas knew their groceries would be delivered in perfect condition, always accompanied by a smile, a laugh and a joke.

As co-workers, we enjoyed every minute spent with Johnny. An eternal optimist — except when it came to matters relating to Spurs — Johnny was always on hand to dish out free advice to staff and customers alike.

There was always a story to tell, whether it was about a gig, a hurling match or, most often, his family, of whom he was so immensely proud.

And you always left a conversation with Johnny feeling better. What a unique gift that is, and what a lasting impression he leaves behind.

Johnny was so much more than a colleague. He was part of our SuperValu Rathdowney family, and his presence, his humour and his kindness will be sorely missed by us all.

We extend our heartfelt sympathies to Jessica, and to all Johnny’s family and all those who loved him at this very sad time. Our thoughts are with you, and we hope you can take some comfort in knowing just how much Johnny was appreciated and how fondly he will be remembered by everyone here in SuperValu Rathdowney.

Rest in peace, Johnny. Thank you for the laughs, the stories and the memories. You will never be forgotten.

Bank holiday mornings are made for a leisurely brunch! ☕🥑🍳⁣
Sarah Butler is serving up the ultimate bank holiday brunch with her Roasted Tomato, Avocado & Poached Egg Baguette, finished with a delicious kick of sriracha mayo. 🌶️⁣

Ingredients⁣
1 demi baguette, sliced in half lengthways⁣
1 avocado⁣
2 eggs⁣
3–4 cherry tomatoes⁣
1 tbsp grated parmesan⁣
Pinch chilli flakes⁣
Extra virgin olive oil⁣
Salt and black pepper⁣
Handful of mixed leaves⁣
For the sauce⁣
3 tbsp mayonnaise⁣
1 tbsp sriracha sauce⁣
⁣
Method⁣
Preheat the oven to 170°C.⁣
Place the cherry tomatoes on a small baking tray, drizzle with olive oil and season with salt and pepper.⁣
Roast for 10 minutes until softened.⁣
Mash the avocado in a bowl until smooth and season lightly with salt and pepper.⁣
Crack each egg into a sieve to remove the watery outer white.⁣
Bring a saucepan of water to a gentle simmer and carefully add the eggs.⁣
Cook for 5–6 minutes until the whites are set and the yolks remain soft.⁣
Drizzle the cut sides of the baguette with olive oil.⁣
Grill or bake in the oven until golden and crisp.⁣
Mix the mayonnaise and sriracha together in a small bowl to make the sauce.⁣
Spoon the avocado onto the toasted baguette.⁣
Top with the poached eggs.⁣
Drizzle with the sriracha sauce and sprinkle with parmesan and chilli flakes.⁣
Serve with the roasted tomatoes and a handful of mixed leaves.⁣
