A tiny vignette of the early morning counter fire n Country Choice kitchen today .
It’s coffee time and I’m reflecting on the challenges ahead . Mary ward starting her Christmas puddings today ,hundreds and hundreds and all hand mixed and hand wrapped . Apricot and sultana chutney to follow along with fig and apple jam and relish.
Purple and pink beetroot relish with roasted apple pulp in a c***r vinegar and ginger pickle.
The work is mounting and the energy has to be tempered . Natural w**es arriving by the week from lively farms in Spain,France and Italy.
My mantra of no sprays and no chemicals is as valid as ever as everyone wakes up to the fact that a nice Lemon in the Supermarket is not just a nice lemon any more. Read the small print al always folks .
People go to great rounds on various apps to read the nutritional value and calorie count of their food but to us there are many more factors regarding the tilling ,growing and harvesting and the chemical regime in place on the farms and production units .

A Christmas pudding day at Country Choice today and our age old practice starts just after lunch.
Amazing smells of dark brown sugar and natural lemon zest . Big Australian raising mixed with melting butter and cinnamon . It’s all a memory and one@of great nostalgia . Mary Ward and her friend Mary Mc Donough is a forty year routine of practice and friendship. All the puddings to be slow cooked in Country Choice over the next four weeks.
New w**es for Christmas coming tomorrow all the way from Catalonia and across the bay of Biscay just like the first w**es for the masses of our early Christian church. We should remember that the natural w**es of the Iberian peninsula are no stranger to our shore and we at CountryChoice work hard to bring you the natural unadulterated juice of the grape ,magic of the moons influence and the careful handling of expert farmers .Just nature and knowledge .

A special Samhain morning that comes bright and dry and welcoming .It’s a day for a walk in the Castlelough or Garrykennedy woods with children and dogs .Feel the magic of the great old oak forest and look for an Pucá .
Maybe a drop into Larkins for a soup by the fire and get some bread to feel the ducks .
A walk in Dromineer and a coffee with Nicola .ie and a good chat to go with it.
Back to Kenyon street and a visit to Country for some good Pate and maybe nice bread and a bottle of full red w**e from Valencia in Spain.
Buy some great raisins and orange peel for mincemeat and maybe a proper real Apple tart for dessert .

A warm dry morning and the sky is a pallet of pinks and greys . The leaves are suddenly mustard yellow and they provide a dry carpet of nostalgia .
Nostalgia for walks with children and Samhain picnics by the Castlelough woods as we serched for creatures of the underworld hiding in the ancient oak forest by the lakes The days have moved on and a pack of hounds are my constant companions.
I pass the abbey and watch the flock crows dancing in a southerly breeze and I wonder by chance if they are in the company of souls that I knew.
I raise my cap and say a prayer . I look at the headstones and see all the familiar names .
I reflect for a minute or two on the restlessness of the days of Samhain and I pray for the peace of all souls .A lad in a lorry gives me a beep and a wave and brings me back to reality . He has a pallet of Australian lexia raisins for me and the whole world is waiting for them . They have come through the UK and after the paperwork I horse scorn on all who voted for Brexit.
It’s time for work and there is a serious list on the bord in the kitchen.
Pates to be made and beef and turkeys to be rolled and cooked . Beet relish to be made for the sandwiches and crimson quince jelly to be made for cheese . I see an aged wheel of Cashel blue bio milk and I just have to taste it with a hot heel of warm soda . The day slips into normality and the merry go round starts slowly with a tune in my head.

When I opened two great wheels of early summer grass made Cashel Blue cheeses this morning I was stopped on the spot by the beauty of both wheels .
Perfectly ripe and full flavoured . One wheel a bio milk mixed here cheese with the little milk company and one with summer milk from local sheep.
Both cheeses reflecting the lovely summer milk brought on by lots of sunshine and time long days .
No hand feeding just lovely Tipperary grass.
These cheeses are a sample of the great condition that one can expect when you buy cheese from us for Christmas or for your Winter entertaining .
We have lovely natural chemical free w**es made by traditional farmers to match.

A lovely Autumn morning and a dry footing . A warm air and no breeze. The trees are golden,crimson ,russet and brown and the shop windows in Kenyon street are borrowing the colours from the hedge rows . Don’t forget Dr. Úna Bromwell is giving us an interesting talk on the history and evolution of Americian politics with a perspective on the Mid. terms and the current political regime .
It’s in Dun Mhuire our gaelige cultural center at 8 pm.
Tea and chats afterwards. The talk will be as Gaeilge with translation provided .

A very ,very early morning trek across Paris to the national cheese Markets. Meeting old friends and suppliers for chats and tastings . An age old tradition for us in Country choice . As we say taste twice and buy once. Sticking with trusted friends in the industry is our mantra .
I’m meeting transport people who care for@our stock on the road and get it to us on time.
I’m seeking new season prunes from Agen and new season walnuts from Gers and Perigord.
Pet Nat w**es from Corbiere and the canel du midi.
I’m arranging for deliveries of new vintages of our superb own lable Champagnes .
It’s a busy time for us but I find the smell@of the new figs and quinces awaken memories of our youth and similar international trips for Country Choice and I say I’m just glad to have my energy and enthusiasm to continue daily .Im also always greatfull for the old and the new customers and at this time I light candles in every dark and ancient Basilica that I see for my friends who have gone their way to God.
