Folláin is the Irish word for wholesome which is at the core of our commitment to honest food made with the purest ingredients to hand. Folláin was born using a 100 year old grapefruit marmalade recipe that had been passed down through family generations. 30 years and more than 30 jams later, Folláin are still piping out preserves in the family factory in Ballyvourney, Co Cork.

One Empty Jar...

Summer tends to bring out the best in home cooks.

Not necessarily because we're making more complicated food. Usually it's the opposite.

- A few good ingredients.
- A handful of reliable recipes.
- And a pantry that's ready when the weather suddenly decides to cooperate.

Which brings us to this...

A homemade spice rub stored in a cleaned empty jar.
Simple, useful, and surprisingly satisfying.

As we head into BBQ season, picnic season, festival season and every other excuse to eat outdoors, we're kicking off a new Al Fresco series focused on practical kitchen ideas, seasonal cooking and making good use of what you already have.

Summer Pantry Staple 🔥
A good spice rub can do quite a lot of heavy lifting. This one takes about five minutes to make!
Ingredients:
- 2 tbsp Smoked paprika
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 tbsp Dried thyme
- 2 tsp Ground cumin
- 2 tsp Black pepper
- 2 tsp Sea salt
- 2 tsp Brown sugar

Method: Simply combine everything in a bowl and mix thoroughly, transfer to a clean jar, label it & store (use within 3 months).

The recipe above makes approximately 8–10 tablespoons of spice rub (around 100–120g).

That is enough to season approximately:
✨ 2 whole chickens
✨ 12–16 chicken thighs
✨ 8–10 pork chops
✨ 10–12 burgers
✨ Several trays of roasted vegetables

It's the first recipe in our Al Fresco series, where we'll be sharing ideas for BBQs, picnics, outdoor gatherings and all the good things that come with eating outside.

That's really what this little project is about.
Not perfection. Just making everyday cooking a bit easier.

Over the coming weeks we'll be sharing more ideas from our Al Fresco series — recipes for BBQs, picnics, summer gatherings and outdoor eating, alongside a few practical kitchen projects like this one.

And while we're very fond of a good jar of relish, we're even fonder of finding a second use for one.

The Classic 🍓

Every strawberry season deserves at least one proper Victoria sponge.

It's practically a rule.

Fresh strawberries, softly whipped cream, and a generous layer of Traditional Strawberry Jam remain one of life's more reliable combinations.

Summer on a Stick 🍓☀️

Some recipes barely qualify as recipes, which is precisely why we like them...

These Strawberry Ice Pops take about two minutes to prepare and disappear considerably faster than that.

Made using our Strawberry & Prosecco Jam for a little extra summer sparkle, they're proof that sometimes the simplest ideas are the best ones.

Just mix:�
🍓 1 jar Folláin Strawberry Jam or Strawberry & Prosecco Jam�
💧 1.5 jars of water

Pour into moulds.�
Freeze.�
Try to be patient.

Strawberry Season 🍓

If there’s one fruit we never seem to tire of working with, it’s the strawberry.

For a few fleeting weeks each year, they're at their absolute best — sweet, fragrant, and perfectly suited to everything from breakfast to dessert.

So over the next few posts, we're celebrating strawberry season with a few of our favourite ways to enjoy them.

We love this Strawberry Cheesecakes served in our empty jars.

Part dessert, part jar reuse project, and ideal for summer gatherings when you don't want to spend the entire afternoon in the kitchen...

Method:
- Put digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. ⁠
- Transfer the crumbs to a bowl, then pour over melted butter.⁠ ⁠
- Mix thoroughly and tip them into the empty jam jars, and press firmly down into the base to create an even layer. ⁠ ⁠
- Chill in the fridge for 1 hr to set firmly.⁠ ⁠
- Mix cream cheese and strawberry jam in a bowl, and top cooled bases with 2/3 generous spoonfuls of the mix.⁠ ⁠
- Leave to set in the fridge overnight, top and garnish with a small spoon of strawberry jam, slices of fresh strawberries, and chopped hazelnuts⁠.

For this recipe we used our Traditional Strawberry Jam, but it also works beautifully with:

Tomorrow's Breakfast 🥣

Some of the best breakfasts are made the night before. Not because they're particularly complicated - quite the opposite...
Five minutes in the evening can mean one less thing to think about in the morning.

Lately, we've been using our new Apple, Pear, Flaxseed & Chia Seed Spoonfuls in overnight oats.

Sweet orchard fruit, a little texture from the seeds, and breakfast effectively takes care of itself while you sleep.

After a brilliant few days at , it's also been lovely hearing how many people are looking for simple ways to make busy mornings feel a little less rushed.

The Morning Part 🍎🍐

This is where the planning pays off...

A jar of overnight oats, a generous spoonful of Apple, Pear, Flaxseed & Chia Seed Spoonfuls, and suddenly breakfast feels considerably more organised than the rest of the day might become.

One of the nicest things about introducing this new flavour at was seeing how quickly people understood it. Not as something complicated - just as an easy way to add fruit, texture and flavour to breakfasts they already enjoy.

Porridge.�
Yogurt.�
Granola.�
Smoothies.�
Overnight oats.

Small change. Good result.

Thank you to everyone who stopped by our stand over the June Bank Holiday weekend and helped make the launch such a success.

Apple, Pear, Flaxseed & Chia Seed was developed after many of you told us you'd love a fruit and seed breakfast topper built around more familiar orchard fruits.
The result is a flavour that's mellow, fruity and wonderfully versatile.
