This beautiful vegetable is actually an unopened flower, loved in Mediterranean cuisine for its delicate flavor and incredible health benefits.
One of the most comforting Greek spring dishes is Artichokes with Green Peas - tender vegetables slowly cooked in rich olive oil with fresh herbs and lemon juice βοΈ

πΏ Greek Artichokes with Green Peas
Ingredients:
β’ 4 fresh ARGOLIDA Greek artichokes
β’ 1 can KHUTOROK Green Peas
β’ 3 potatoes, cut into quarters
β’ 2 carrots, sliced
β’ 1 sweet red onion, chopped
β’ Fresh dill, parsley, and celery leaves
β’ Juice of 1 lemon
β’ EVGE Bio Extra Virgin Olive Oil
β’ Salt & black pepper
β’ Water
Recipe:
1. Clean the artichokes by removing the hard outer leaves and trimming the stems. Remove the fuzzy center and place the artichokes in water with lemon juice to prevent darkening.
2. Heat olive oil in a large pot and gently sautΓ© the onion and artichokes for about 5 minutes.
3. Add potatoes, carrots, salt, pepper, and enough hot water to cover the vegetables. Add half of the lemon juice.
4. Cover and simmer on low heat for about 45 minutes until the vegetables become soft and tender.
5. Add the KHUTOROK Green Peas during the last 10β15 minutes of cooking.
6. Finish with fresh herbs and the remaining lemon juice before serving.
