All of our chocolate is hand-made in our approved premises. We purchase the raw beans direct from Filipino growers. We then roast, crack, winnow, grind and conch the cocoa for a minimum of 2 days until silky smooth to produce a dark and characteristically fruity finish typical of the Filipino Cocoa.
Dependent on the type of chocolate we shall add carefully selected flavours and aromas to give the desired variation, and/or a quantity of milk for the milk chocolate varieties.
Our natural ruby chocolate (unlike other white chocolate dyed varieties) is real chocolate cocoa from Belgium As well as natural flavour we may add carefully selected flavours and aromas to compliment the original flavour and texture of the Ruby Chocolate.
