​We’ve taken the finest, freshest local Cornish haddock and packed these fishcakes full of flavour. No nasty additives or preservatives, just pure goodness. Here is what’s inside:

​Looking for a little luxury this week? We’ve taken our Homemade Fishcakes to a whole new level!

​Our latest creation is inspired by the bold, zesty flavors of Chimichurri, softened with lashings of fresh double cream and the finest Cornish Po***ck, then blend it with butter and fresh spring onions for a rich, melt-in-the-mouth texture that is pure indulgence.

🌊 The Star of the Show: Wild Cornish Bass 🌊

​There is a reason the Wild Cornish Sea Bass is known as the "Silver King." It’s the ultimate treat for any seafood lover, and we have some stunning specimens on the ice right now at Off the Hook.
​Why it’s top-tier:
​The Taste: It’s a true delicacy. Wild bass offers a sweet, clean flavor profile and a firm, large flake that you just don't get with farmed fish. It's sophisticated yet simple.
​The Sustainability: At Off the Hook, we prioritize line-caught Cornish bass. This traditional method is low-impact, prevents overfishing, and ensures that the seabed—and the future of our local waters—is protected
​🌶️ Fresh & Zesty: Thai-Style Steamed Wild Bass 🎣
​If you want something light, fragrant, and packed with a punch, this is the recipe for you. It keeps the fish incredibly moist and tender.

​Ingredients:
​2 Wild Cornish Bass fillets 🐟
​2 tbsp Soy sauce
​1 Lime (juiced) 🍋‍🟩
​1 tsp Ginger (grated) 🫚
​1 Garlic clove (minced) 🧄
​1 Red chilli (finely sliced) 🌶
​A bunch of spring onions and fresh coriander

​Method:
​The Parcel: Lay each fillet on a large piece of greaseproof paper or foil.

​The Aromatics: In a small bowl, whisk together the soy sauce, lime juice, ginger, and garlic. Pour this over the fillets. Top with the sliced chilli and half of the spring onions.

​The Steam: Fold the paper/foil over and crimp the edges tightly to create a sealed parcel. Place the parcels in a steamer (or on a tray in a 200°C oven) for 8–10 minutes.

​The Finish: Carefully open the parcels—watch out for the hot steam!—and scatter with the remaining spring onions and fresh coriander. Serve alongside jasmine rice or pak choi.

🐟 Fresh In this week: Chalk Stream River Trout! 🐟

​Straight from the crystal-clear waters to our counters at Off The Hook Fishmongers, we'll be landing some absolutely stunning Chalk Stream River Trout.

​If you love salmon but want something a bit more delicate, lean, and sustainably raised right here in the UK, this is your catch of the week. These beauties are reared in the unique alkaline waters of southern English chalk streams, giving them a clean, nut-like flavor that is truly world-class. 

It’s lean, sustainably sourced, and—most importantly—delicious.

​To celebrate, we’ve put together a recipe that’s a bit more "diverse" than your standard butter-and-lemon fare.

​🌶️ Recipe: Miso-Ginger Glazed Trout with Sesame Slaw

​A vibrant, Japanese-inspired dish that perfectly complements the clean taste of the trout.

​Ingredients:

​2 Chalk Stream Trout fillets (available at the shop!)

​The Glaze: 1 tbsp white miso paste, 1 tsp grated ginger, 1 tbsp honey, 1 tbsp soy sauce, and a splash of sesame oil.

​The Slaw: Shredded red cabbage, spring onions, edamame beans, and a dressing of lime juice and chili oil.

​Method:

​Glaze: Whisk the glaze ingredients together until smooth.

​Sear: Heat a non-stick pan over medium-high heat with a little oil. Place the trout skin-side down for 3–4 minutes until the skin is ultra-crispy.

​Brush: While the skin crisps, brush the miso glaze generously over the flesh side.

​Flip: Carefully flip the fillet and cook for just 60–90 seconds. The glaze will caramelize quickly, so keep an eye on it!

​Serve: Plate up alongside your crunchy sesame slaw and some sticky rice.

🌊 Local Hero: The Legendary Cornish John Dory 🌊

​There is a saying in the fish world: "The uglier the fish, the better the taste." If that’s true, the John Dory might just be the best-tasting fish in the Atlantic!
​Available right now at Off The Hook Fishmongers Wadebridge, this prime Cornish catch is a true chef’s favorite. Here is why you need it on your plate this week:

​✨ The Taste
​Forget what you know about white fish. John Dory has a firm, meaty texture that flakes beautifully. The flavor is delicate, sweet, and incredibly buttery—often compared to turbot or Dover sole, but with a character all its own.

​🌍 Sustainability
​We source our Dory from local Cornish day-boats. Because they are often caught as a "by-product" of other sustainable fisheries rather than being specifically targeted in huge volumes, eating John Dory supports a diverse, balanced ocean ecosystem and our local fishing fleet.

​🍅 Recipe: Mediterranean Roasted John Dory

​Ingredients:
​2 John Dory fillets
​200g cherry tomatoes (on the vine if possible)
​1 handful of pitted Kalamata olives
​1 clove of garlic, thinly sliced
​A few sprigs of fresh thyme or oregano
​Extra virgin olive oil
​A splash of dry white wine (optional)

​Method:
​The Base: Preheat your oven to 200°C. In a small roasting tray, toss the tomatoes, olives, garlic, and herbs with a generous glug of olive oil and a pinch of salt.

​The Roast: Pop the tray in the oven for about 10–12 minutes until the tomatoes start to blister and release their juices.

​The Fish: Remove the tray and nestle your John Dory fillets (seasoned with salt and pepper) right on top of the tomatoes. Add a splash of white wine to the tray if you're feeling fancy.

​Finish: Return to the oven for 6–8 minutes (depending on thickness) until the fish is opaque and just firm to the touch.

​Serve: Drizzle the juices from the bottom of the pan over the fish and serve with crusty sourdough bread to mop up the sauce.

🦀 Fresh from the Cornish Coast to Your Kitchen! 🦞

​There is nothing quite like the taste of the Atlantic, and right now at Off the Hook Fishmongers, our counters are looking spectacular.

We’ve just landed a fresh haul of Cornish Crab and Lobster—sweet, succulent, and caught right here on our Cornish waters.

​Whether you’re planning a decadent seafood platter or a simple, sun-drenched lunch in the garden, we’ve got the best of the day’s catch waiting for you in Wadebridge.

​👩‍🍳 Chef’s Pick: The Ultimate Cornish Crab Linguine 🦀

​This recipe is a local favorite because it lets the delicate flavor of the crab shine without overcomplicating things. It's ready in just 15 minutes! 😋

​Ingredients:

​300g Fresh Cornish Crabmeat (a mix of white and brown for depth)
​350g Linguine
​2 cloves of garlic, finely sliced
​1 red chili, finely chopped (deseeded if you prefer less heat)
​Juice and zest of 1 lemon
​A big handful of fresh parsley, chopped
​A good glug of good quality olive oil
​Salt and pepper to taste

​Method:

​Boil the Pasta: Cook your linguine in a large pan of salted water until al dente.

​Infuse the Oil: While the pasta cooks, heat the olive oil in a wide pan over low-medium heat. Add the garlic and chili, sizzling gently for 2–3 minutes until softened (don't let the garlic brown!).

​Toss: Drain the pasta (reserve a splash of the cooking water) and add it straight into the oil.

​The Main Event: Stir in the fresh crabmeat, lemon zest, lemon juice, and parsley. Add a splash of the pasta water to create a silky sauce that coats the strands.

​Serve: Season well and serve immediately with a cold glass of white wine.
