Cornish Yarg is a semi hard cheese wrapped in nettle leaves to add flavour and help it mature. Our Wild Garlic Yarg follows the same recipe but is slightly firmer in texture with a gentle garlicky taste. Cornish Kern, a World Cheese awards Supreme Champion, is a longer maturing hard farmhouse cheese made to a Gouda recipe with Alpine cultures. Our cheeses are available from delis, cheesemongers, selected supermarkets and farm shops. We also sell directly from our dairy.

What does time look and taste like? Look closely at our Kern.

The texture is close and flinty, and those white flecks are tyrosine crystals, which form as proteins break down over long ageing.

Time has done the work, leaving a flavour deep and savoury. We call it our cheese for every course, a quiet shape shifter: it lifts any dish it’s added to, while standing strong on its own.

Meet the bakers behind our popular loafs.

The Stones Sourdough is made with just three ingredients: organic flour, water and salt. The magic is in the starter, a living fermented culture of flour, water and wild yeast that the team has kept alive for 19 years, since the day they opened their bakery.

Baked fresh each day in a woodfired oven in Penryn, it's a French designed Le Panyol, built on site, which weights around 16 tonnes!

If you’ve only ever had Yarg on a board, try cooking with it. It makes properly good croûtes, golden and crisp, and they’re the perfect thing to float on a bowl of pumpkin soup. You’ll hear the difference.

Something to look forward to this weekend: we’ll be sampling Merope from Trevibban Mill in the shop. Peach, melon and a little gooseberry sharpness, best with Garlic Yarg or Rosary goats’ cheese. Come and see which pairing wins you over.

Yarg gets a lot of the attention, but there’s more to the dairy than the nettles. If you’ve not tried the rest of the Lynher range, a 450g wedge is a good place to start. Available online.
