Quick and Wholesome Veg Soup: 200g chopped onions, celery, carrots, plus 300g potatoes, 700ml veg stock and crème fraiche - fry the veg and potatoes until beginning to soften, cover with stock simmer until tender, blend, season - dollop of crème fraiche or some fresh herbs - VOILA!
