Happy Thursday everyone! With the beautiful weather, we thought we'd bring you our decadent zesty summer sponge cake, with a bright citrus flavour, one the family will love! It's truly delicious, with a punchy citrus flavour coming from orange, lemon and lime, plus silky whipped cream and crunchy pistachios.

Ingredients:
• 170 g self raising flour
• 50 g ground almonds
• 225 g caster sugar
• 2 tsp baking powder
• 1 orange, extra for decoration
• 1 lemon, extra for decoration
• 1 lime, extra for decoration
• 150ml of Fussels Extra Virgin R**eseed Oil
• 4 free range eggs
• 500 ml double cream
• 1 tbsp icing sugar
• 1 tsp vanilla extract
• 4 tbsp lemon curd
• handful of pistachios

Method:
1. preheat oven to 180c/gas mark 4
2. Place the flour, almonds, sugar and baking powder into a large bowl.
3. Finely grate in the zest of the lemon, lime and orange along with 75 ml of juice, before adding the oil and the eggs.
4. Mix well in a food mixer, or by hand, until all the ingredients are combined and a smooth batter forms.
5. Divide the mixture equally between two grease and lined 15 cm/6 inch sandwich tins and bake for 25-30 mins or until golden brown. The tops of the cakes should spring back when lightly pressed and a knife comes out cleanly when put into the centre of the cake.
6. Place on a wire tray to cool whilst you make the cream.
7. In a bowl, combine the cream, icing sugar and vanilla. Whisk using an electric whisk until the cream is stiff but still pliable.
8. Divide it into two bowls, rippling the lemon curd through only one of the bowls, this is the cream to sandwich the sponges together.
9. When completely cooled, place one sponge on a serving plate and spoon on the lemon curd cream and level it out with a palate knife.
10. Place the second sponge on top and spread the plain whipped cream over the top.
11. Finish with slices and strips of orange and lemon peel and add the chopped pistachios to give it an added crunch.
12. Store in the fridge and consume within 2 days.

Time for the best tasting burger on social media, check out our Turkey Burgers with Sticky Pepper Relish below. 👇

Ingredients:
• 450g (1lb) minced turkey
• 125g (4 ½ oz) ready grated raw carrot (approx. 3 medium carrots, peeled and grated)
• 4 spring onions, chopped or snipped
• 45ml (3tbsp) green or red ready-made pesto
• 1 large egg, beaten
• freshly ground black pepper
• 10 pumps Fussels Extra Virgin R**eseed Oil approx.
• 4 ciabatta rolls warm and split
• handful rocket leaves
• Pepper Relish to serve

Method:
1. In a large bowl, mix the turkey with the carrot, spring onions and pesto.
2. Add the egg and season with freshly ground black pepper, stir well to combine really well.
3. Divide the turkey mixture into 4 and shape into large burgers. Chill in the refrigerator for 20 minutes.
4. Heat the oil in a large non-stick frying pan, cook burgers for approx. 7-8 minutes each side on a medium heat or until golden and cooked through.
5. Serve in ciabatta rolls with crisp rocket leaves and a good dollop of the pepper relish.

He’s part of the Hawkstone Farmers Choir ( on Instagram) - 32 farmers from across the country who wowed the nation and earned Amanda Holden’s Golden Buzzer with their stunning performance of Elbow’s One Day Like This.

But this is about so much more than a talent show. These farmers are singing to shine a light on mental health within the farming community - an issue close to all our hearts.
