Today we received one of our own farm-reared Simmental heifers, reflecting the quality and care that goes into every cut we offer.

This beef has already been aged for 10 days and will continue to mature for at least a further 14 days, ensuring excellent flavour and tenderness. We have also cut the fore rib extra large, making it ideal for our premium tomahawk steaks.

tonight we had a gammon joint which i roasted with roasted veg (toms, carrots, red peppers, red onions, baby pots, finely chopped garlic and a little salt and pepper and oregano) in oven for 40 -45 mins with a mixed berries glaze.
2 cups mixed berries (fresh or frozen)
1/4 cup brown sugar
1/4 cup honey
1/4 cup balsamic vinegar
1/4 cup water
2 tablespoons Dijon mustard
mixed in a saucepan on medium heat for 15 mins after 10 mins i used a hand blender to blend the mix, once ready i coated the gammon in the glaze and every 15-20 mins glazed the joint once cooked left to rest for 15 mins, served with the veg and a drizzle of the glaze, very nice it was
