We’ve got plenty of cauliflower leaves available in our honesty stall right now — and they’re perfect for creating a vibrant, homemade pesto.
✨ Recipe Idea: Cauliflower Leaf Pesto ✨
🥬 What you’ll need:
• A big bunch of cauliflower leaves
• A handful of nuts (pine nuts, walnuts, or almonds)
• Grated parmesan (or nutritional yeast for a vegan option)
• 1 garlic clove
• Juice of ½ lemon
• Olive oil
• Salt & pepper
👩🍳 How to make it:
Wash the leaves well and remove any tough stems.
Blanch in boiling water for 1–2 minutes, then cool in cold water.
Squeeze out excess water and roughly chop.
Add everything to a food processor and blend until smooth.
Taste and adjust seasoning — then enjoy!
