Freshwater & Alpine flavours for one night only.

For the second edition of our Winemaker Series, chef Joe Couldridge joins Adrien Berlioz of Savoie for a dinner shaped by mountain herbs, cold rivers and early summer produce.

Expect bright Alpine wines, fish from , buttery sauces, soft herbs and dishes served family-style around the table.

On the menu:
Fleur des Alpes croustade with mizuna, anguille au vert, wild brown trout stuffed with agretti, olives & tomatoes, buttery Crozets de Savoie, and strawberry tart with Chamberyzette glaze.

Mortadella, properly made 🇮🇹

Ours comes from Artigianquality, the last producer still hand-making authentic Mortadella inside the city walls of Bologna.

100% Italian pork, traditional spices, no shortcuts, slow-cooked for up to 28 hours. Soft, fragrant, ridiculously good.

Freshwater & Alpine flavours for one night only.

For the second edition of our Winemaker Series, chef Joe Couldridge  joins Adrien Berlioz , a brilliant grower from Chignin in the foothills of the French Alps, for a dinner shaped by cold rivers, mountain herbs and early summer produce.

Adrien’s wines come from steep Alpine vineyards in Savoie, where he works with organic and biodynamic farming, native varieties and a gentle hand in the cellar. The wines are bright, lifted and full of energy.

Joe has worked across some of London’s most established restaurants over the years like Leroy, The Clarence Tavern and most recently as Head Chef of The Prince Arthur in Dalston, where he gained numerous accolades. He has also just completed a run of pop-ups at Duchy, The Camberwell Arms and Ernest in Marseille.
Joe’s cooking is firmly rooted in whole-animal cookery, with a strong European sensibility and a particular connection to French food. For this dinner, he is working with , who will be supplying the fish for the evening.

The menu follows the same feeling: clean, seasonal and full of freshness. Expect fish from , plenty of soft herbs, buttered sauces, summer vegetables and Alpine touches throughout.

On the menu: Fleur des Alpes croustade with mizuna, anguille au vert with smoked and fresh eel, wild brown trout stuffed with agretti, olives and tomatoes, summer vegetables with buttery Crozets de Savoie, and strawberry tart with Chamberyzette glaze and crème pâtissière.

How do you like them apples?

There are over 600 types of apple in Brittany, and many of them end up in the beautifully golden, lightly fizzy, antioxidant and vitamin-rich taste of the holidays that is Cidre Breton - now available from us.

This fine, artisanal cider carries Protected Geographical Indication (PGI) certification: a collaboration between 38 growers and producers across the region, all of whom follow sustainable and responsible farming practices. An orchard specialist works closely with each grower, advising on key decisions such as selecting varieties suited to Breton soil conditions, as well as pruning and harvest timing. 

Traditional Cidre Breton is made from 100% fermented apple juice, with absolutely no added sugar, and undergoes not one but two fermentations. The second, lasting several months, develops the rich, rustic complexity that we know and love. 

Best served chilled, available in 33cl and 1 litre bottles in our shops and for wholesale. The 33cl bottle is also on our bar menu in Holloway. Come and taste it!
