Ascot Approaches.
Which means somewhere in Berkshire, champagne is already being chilled, conversations about form are becoming wonderfully confident, and a Range Rover is preparing to become a rather excellent restaurant.
Quite right too.
Because Ascot has always been about long lunches, cold glasses, and tables nobody leaves on time.

Cucumber.
Caviar.
A completely unnecessary amount of elegance for something that disappears in about four minutes.
Which, frankly, is exactly our sort of recipe.
Cold cucumber.
Cream cheese.
A sensible spoonful of caviar.
And suddenly everyone’s hovering around the kitchen pretending they’re “just trying one”.
As all good hosting should begin.

Chelsea's blooming mad. Flowers absolutely everywhere. Guaranteed sunshine. Time for some champagne. Caviar? Yes, please, because somewhere between the roses climbing buildings, the champagne appearing at midday and London collectively showing off a tin of caviar, suddenly feels like the most sensible decision of the week.

Chelsea Flower Show begins Tuesday.

At present, Britain is doing that wonderful thing where you leave the house carrying both sunglasses and an umbrella, because frankly nobody has the faintest idea what’s going on anymore.
But a heatwave is apparently on the way.
Which means that by the end of the week the gardens will be full, the champagne properly chilled, and everyone suddenly rediscovering outdoor furniture they haven’t touched since September.
Until then, we’ll happily admire the flowers from indoors.
Royal Ossetra caviar.
Something excellent in the glass.
And the sort of table that makes dreadful weather feel entirely irrelevant.

Here’s the thing…
good things take their time.

A sturgeon doesn’t rush.
Eight to fourteen years, give or take, before anything worth serving appears.
Until then, she’s left to do what she does best, swim, eat, and mind her own business.
No deadlines. No pressure. No impatient tapping of the watch.

In a world obsessed with speed, it’s quite refreshing.
Quietly worth the wait.

The way it lingers, buttery, briny, quietly decadent.
Caviar has a way of slowing everything down.
Of making a moment feel deliberate.
There’s something rather lovely about giving her a taste of something she might never buy for herself.
