We love working with Tom and Clare to bring their exceptional lamb to your door. They work regeneratively across their farm in Devon, working in particular with their local community to restore long lost marshland. Great farming makes great tasting food too, so it’s a win win in our eyes.

This Bone Broth Baked Rice with Crispy Chicken, Cavolo Nero and Butternut Squash is just the thing to warm these chilly January evenings and give us some much needed nourishment.

Ingredients:
Field & Flower Family Pack of Skin-On Chicken Breasts
SPRING Bone Broth – Blonde Chicken
1 onion
570g jar of butterbeans
1/2 a butternut squash
200g Cavolo Nero
300g White Rice
2 garlic cloves
2 bay leaves
2 tbsp Paprika
Zest of 1 lemon

Method:
1. Pan fry the chicken breasts skin-side down until crispy.
2. Chop and sauté the butternut squash, onion & garlic with the bay leaves & lemon zest until softened & fragrant.
3. Blanch your cavolo nero & squeeze out the excess water. Then finely chop before adding to the pan.
4. Add the rice, butterbeans & pour over the chicken bone broth.
5. Cover and bake in a 180°C fan / 200°C oven for 25-35 minutes until the rice is fluffy.

Using tips from Tom at SPRING broth, we’ve created a nutrient-dense bone broth recipe perfect for soups, stews and gravies. If you’re pushed on time, you can also buy one of our ready made Chicken, Beef, or Turkey SPRING Bone Broths, all made with free-range meat sourced from family-run farmers.

Bone Broth Recipe:
1x 2kg Field & Flower Beef Stock Bones
2L water
2x Carrots
2x Celery Sticks
4x Portobello Mushrooms
Garlic
Thyme
Bay Leaves
Parsley

1. Roast your bones & vegetables for 20 minutes in a 180°c fan / 200°c oven.
2. Place the roasted bones & vegetables into a high-sided pot. Add in the herbs. Pour over the water.
3. On a medium-low heat, bring the pot to a simmer. Leave it to simmer for 6-8 hours.
4. Remove the big pieces, then strain.
